Ingredients

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cucumber, diced

  • 1/4 cup red onion, finely diced

  • 1/4 cup feta cheese, crumbled (optional or vegan alternative)

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions

  • In a large mixing bowl, combine quinoa, cherry tomatoes, cucumber, red onion, and feta.

  • Drizzle with olive oil and lemon juice.

  • Season with salt and pepper.
