1 cup (226g) unsalted butter, softened
1 cup (200g) brown sugar
½ cup (100g) white sugar
2 large eggs
1 tsp vanilla extract
2 ¼ cups (280g) all-purpose flour
½ tsp baking soda
½ tsp salt
1 cup chopped pistachios (unsalted, roasted preferred)
¾ cup white chocolate chips (optional)
Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
In a large bowl, cream butter, brown sugar, and white sugar until light and fluffy.
Add eggs one at a time, mixing well. Stir in vanilla extract.
In a separate bowl, whisk together flour, baking soda, and salt.
Gradually add dry ingredients to the wet mixture until just combined.
Fold in pistachios and white chocolate chips.
Spread dough evenly into prepared pan and smooth the top.
Bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
Cool completely in the pan before slicing into bars.
For enhanced flavor, toast pistachios before adding.
Use almond extract for a deeper nutty profile.
Store in an airtight container for 5 days or freeze for 3 months.
