Smashburger

The smashburger is a bold, flavor-packed burger known for its crispy, caramelized edges and juicy center. Unlike traditional burgers, the patty is smashed flat on a hot griddle to maximize surface contact, triggering the Maillard reaction that gives the meat its signature crust. It’s quick to make, intensely beefy, and incredibly satisfying—perfect for weeknight dinners or hosting a casual burger night.

Ingredients

  • 1 lb (450 g) ground beef (80/20 blend)

  • 4 soft burger buns (brioche or potato recommended)

  • 4 slices American cheese (or your preferred melting cheese)

  • Salt and black pepper, to taste

  • 1 tbsp butter or oil (for toasting buns)

  • Optional toppings:

    • Pickles

    • Sliced onions (raw or caramelized)

    • Lettuce

    • Tomato slices

    • Ketchup, mustard, mayo

Instructions

  • Form Patties:
    Divide the ground beef into 4 loose balls, about 4 oz each. Do not compress tightly.

  • Preheat Griddle:
    Heat a cast-iron skillet or griddle over high heat until very hot (about 5 minutes).

  • Smash and Season:
    Place a beef ball onto the hot surface. Use a sturdy spatula to smash it down firmly into a thin patty (about ¼ inch thick). Season with salt and pepper.

  • Cook First Side:
    Let it cook undisturbed for 2–3 minutes to develop a crust.

  • Flip and Add Cheese:
    Flip the patty, add cheese immediately, and cook for another 1–2 minutes until the cheese melts and the patty is cooked through.

  • Toast the Buns:
    In another pan or on the griddle, toast the buns cut side down in butter until golden brown.

  • Assemble:
    Stack the cheesy patty on the bottom bun and layer with your favorite toppings and sauces. Top with the other half of the bun.

 

  • Serve:
    Enjoy immediately while hot and crispy!

Notes

  • Use a burger press or two spatulas for even pressure while smashing.

  • Smashburgers cook quickly—have your toppings ready before you start.

  • Double up on patties for a classic diner-style double smash!
