Perfect for BBQs, picnics, potlucks, or light lunches, this 5-ingredient salad is ready in minutes and always a crowd favorite.
4 cups watermelon, cubed (seedless, chilled)
¾ cup feta cheese, crumbled
¼ cup fresh mint leaves, chopped
1–2 tbsp extra virgin olive oil
Optional: 1 tbsp fresh lime juice or balsamic glaze
Optional add-ins: thinly sliced cucumber, red onion, blueberries, or chili flakes
Chop the watermelon into 1-inch cubes and place in a large salad bowl.
Crumble the feta cheese over the top of the watermelon.
Chop and add the mint, scattering it evenly over the salad.
Drizzle with olive oil and optional lime juice or balsamic glaze.
Toss gently with clean hands or tongs until just combined—don’t overmix.
Serve immediately or chill for 10–15 minutes before serving for a colder bite.
Use chilled seedless watermelon for the best flavor and texture.
For vegan variation, replace feta with avocado or vegan feta crumbles.
Don’t add salt—feta brings enough saltiness.
Keep mint fresh by chopping it right before serving.
Leftovers are best eaten within 1 day.
