  • 4 cups watermelon, cubed (seedless, chilled)

  • ¾ cup feta cheese, crumbled

  • ¼ cup fresh mint leaves, chopped

  • 12 tbsp extra virgin olive oil

  • Optional: 1 tbsp fresh lime juice or balsamic glaze

  • Optional add-ins: thinly sliced cucumber, red onion, blueberries, or chili flakes

Instructions

  • Chop the watermelon into 1-inch cubes and place in a large salad bowl.

  • Crumble the feta cheese over the top of the watermelon.

  • Chop and add the mint, scattering it evenly over the salad.

  • Drizzle with olive oil and optional lime juice or balsamic glaze.

  • Toss gently with clean hands or tongs until just combined—don’t overmix.
